Hey there fellow Valorians! Brav is here with another blog! Instead of football, another one of the things I enjoy doing is cooking! I love to try restaurants, but now living on my own means I have to be more conservative on my savings, which means eating out less. So I’m going to create this blog for everyone to post! Share recipes, tips and give one another a hand to those with struggling culinary skills! Feel free to share you cooking masterpieces...or disasters! I’ll be posting recipes on here as well as trying new ones, sharing tips and pointers of what went well and what needs improvement/change. Pictures are encouraged but not required. I cannot wait to see the interesting foods you all post!
Typically I don't take pictures of my food, but when I make my baked mac-and-cheese later I'll be sure to snap a shot of the finished product. Mind you, I actually have to get it right this time; it turned out a bit grainy last time, either because I didn't melt the cheese correctly or I screwed up the roux.
Hmm, sounds as if you put a bit too much flour in your roux. I’ve found that you really don’t need as much if you’re making the sauce with the milk, cheese and salt. Shredded cheddar will automatically start thinking the sauce. And I use a little bit less milk than usual so it doesn’t turn out so soupy. Remember you can always add more.
It doesn't call for a lot of flour, though; normally roux is equal parts butter and flour (IIRC), but the recipe calls for a bit more than half the normal amount of flour for the roux. This last time I forgot that I needed to add the milk to the roux so I ended up having to do it the other way around. *facepalm* At least I got the color right; last time it was a brown color... Actually, the thickness seems to be just right for a baked mac; it thickens up even more in the oven but still remains pretty creamy (despite the graininess) when it's pulled out.
Finally got to something I’ve been eager to try out for a long time! Oreo truffle balls dipped in whites chocolate! Can you guys believe that I came back from our Christmas get-together with the container totally empty?
Yes, I can believe it. That's one of the few things with white chocolate that I actually enjoy. Mainly because it's made from Oreo. XD Anyway (since I don't want to double-post) I cooked today, so here's a picture of some chili that I made today: (I forgot to take a picture before we ate... ) Anyway, this is a 'maple bourbon sweet potato chili'. Came out pretty well, though next time I won't use chickpeas (wanted to see if they could work).
