A few classic bosses for you

Phantom Ganon, The Legend of Zelda: Ocarina of Time--once you lure him out of the paintings, batting a ball of energy back and forth is fun! Not so fun when you have to do it again against Ganondorf later.
Tubba Blubba, Paper Mario 64--The way this entire fight is set up is really fun, and gives you an idea of just how powerful (and helpful) Bow (the lady ghost who becomes a party member at this end of this chapter) actually is
Lava Piranha Plant, Paper Mario 64. Another example of showcasing how great a playable character (Sushie) is, but it helps that the story leading up to this fight is great too--and did I mention the Yoshis are just too cute in Paper Mario 64?

Where's the Soulsborne love to? This list is based off lore, arena design and boss difficulty

Dark Souls 1: Gaping Dragon... It's a dragon, plus there's no rabbit boss.
Dark Souls 2: Either Lost Sinner, Fume Knight, Velstadt the Royal Aegis, Scorpioness Najka or Duke's Dear Freja.
Dark Souls 3: Torn between the Abyss Watchers, Deacons of the Deep, Crystal Sages, Dancer of the Boreal Valley and Yhorm the Giant.
Bloodborne? Cleric Beast, Darkbeast Paarl and Blood Starved Beast.
