In the Pokémon anime or games, does any of the people say anything about them eating Pokémon?
    ---
even though Pokémon are powerful creatures would you consider them as animals to eat?

Yeah, there are a few times when eating Pokémon is mentioned, mostly in the anime or some Pokédex entries.

I remember that eating Magikarp was once mentioned in the anime, and Heatmor's Pokédex entry says it eats Durant.

I was unaware that it was mentioned in the anime. A magazine published an article about the possibilities of Pokémon being food.

There's also Farfetch'd being a delicacy too, then Slowpoke tails. There are several entries in the Pokédex where it's suggested some are used as food, if not by us then by other Pokémon. It makes sense if you think about it. Pokémon are the only animals that inhabit that world after all.

Oh yeah, of course, Slowpoketail. I think that's the only time that eating Pokémon is mentioned in-game (apart from Pokédex entries)

Logically I don't see how they don't eat Pokémon. There's no other animals around and we do see them eating meat. It doesn't really bother me much. Like we in the real world eat a bunch of things that could be considered pets. :/

Anyways, Ash mentioned once when he saw a sick magikarp that "it looks like it's ready for the deli counter." That's the only instance I know of

I've always thought of the Pokémon world as like, an ecosystem. Where you have the carnivores, the omnivores, the herbivores, and the detritivores.
Some Pokémon eat other Pokémon, like I think most of the bigger fish Pokémon would probably eat Magikarp, or the pre-Evo's of other fish Pokémon. And Pokémon that live on the land would eat either berries/fruits/plants, or they would eat other Pokémon. Like, Liepards would go and hunt down other smaller Pokémon, say a Pidgey, for food. And that Pidgey would eat berries and fruits, and/or smaller plant(grass types) and bug Pokémon Pokémon (like cherubi, Kricketot, scatterbug, etc.)

I know for myself at least, if someone served me a tauros burger, with miltank cheese I'd have no issue, have a delicious fearow roast for thanksgiving, a Christmas spoink ham. No issues whatso ever.

well in the anime it is hinted that there exist other creatures than Pokémon
    take this as an example

It really does seems like a normal dog to me. there are also times when the Pokédex talks about real life animals too, but it might just be so we understands it's powers more easily

but that aside it does seem likely that Pokémon are eaten by us and other pokemons like a normal food chain.

I remember an episode in the anime where Team Rocket bought a Magikarp. Then when they got stranded somewhere with Ash and his friends, they were all dreaming of eating it.

And some TCG cards have Birds and stuff in them, so there are animals, not just Pokémon, in the wild.

Ok I found the article that sparked my interest in this subject, here's a screen shot of it:

I'[m surprised no one else has mentioned that in the Pokédex in Diamond it mentions Cherubi in risk of being a more vulnerable Pokémon because Pokémon like the taste of the fruit that makes up a Cherubi's body. Humans could apply to it as well.

In Diamond and Pearl the library in Canalave City has some long-winded texts that talk about eating Pokémon, so far as to pick its bones clean, and then put them back where you found them, whereupon the Pokémon will regenerate or be reborn or something that tries to lessen the emotional impact of killing a creature in a kid's game. It's kind of messed up in what it implies, but it just straight-out admits that Pokémon ARE used as food.
