I keep seeing people talk about them and I have no idea what they are.

I'm going to get a lot of facepalms for asking this.

IVs Individual Values that are math behind a Pokémon's stat randomly ranging from 0 - 31 for all 6. ( HP, Att, Def, SP. Att, Sp Def, Speed) it's like the DNA of Pokémon in a sense. the Higher the IV number of a stat, the higher its stat will be. Every Pokémon will have different number for there stats unless you know how to breed for them. it's more beneficial in competitive play. For an easy explanation.

Don't worry about it, before 6th Gen I was clueless on IVs and EVs.

They aren't important if you don't play competitively. I never bother with them like ev training i think that people who focus sooo much on it forget that every Pokémon can be good.

That guide could use a little bit of updating to account for the changes in generation 6. For example, two IVs are not the most you can pass down through breeding any more. Also, is there a hidden power Fairy?

Along with the guide here on site, I'm sure you could find some help on youtube as well if you search something like 'Pokémon ivs'. I didn't used to care about EV and IV training either until recently. It makes the game more complex, harder. Though in a fun way. Makes it go by slower, which I like since I don't like breezing through a game too quickly.
